The angel's share is unavoidable, but its size isn't fixed. A few factors influence how much spirit you lose.
What drives evaporation
- Temperature — warmer conditions increase losses
- Humidity — drier air pulls more water and spirit out
- Cask size — smaller casks lose proportionally more
- Cask condition — a leaky or very active cask loses faster
- Time — longer maturation, more loss
Levers you can pull
- Choose cooler, more stable warehouse positions for long maturation
- Manage humidity where practical
- Use larger casks for very long maturation
- Maintain casks and address leaks promptly
- Plan maturation length deliberately — don't over-age
Measure to manage
