The "angel's share" is the spirit that evaporates as it matures. Here's how to measure it.
The formula
Angel's share % = (Fill volume − Current volume) ÷ Fill volume × 100
Worked example
A cask filled with 200 L now measures 188 L:
(200 − 188) ÷ 200 × 100 = 6% volume loss
Because strength can also shift, track both volume and ABV to understand the true loss in litres of pure alcohol (LAL).
Why it matters
- Value — it tells you how much sellable spirit you actually have
- Compliance — documented losses keep your excise records clean
- Insight — high losses may point to warehouse conditions or cask quality
