Major cost buckets
- Equipment — still(s), fermenters, tanks, packaging line. The biggest variable; a small pot still setup is modest, automated systems are far more.
- Premises — fit-out, security and a compliant bonded area (see premises requirements).
- Licences — the ATO excise licence is free, but state liquor licences have fees.
- Stock & ingredients — grain, botanicals, casks, bottles and packaging.
- Working capital — the one people underestimate.
Don't forget cash flow
If you're making whisky, capital is locked in cask for years before revenue. Many founders launch a gin first to fund the wait.
