Cask choice is one of the biggest flavour decisions a distiller makes. Four levers matter most.

1. Oak species

American oak tends toward vanilla and coconut; European oak toward spice and tannin. Australian oak is an emerging option with its own character.

2. Char / toast level

Heavier char filters and adds smoky, caramelised notes; lighter toast is gentler. Match to your target style.

3. Size

Smaller casks (quarter casks) mature faster due to higher wood-to-spirit ratio; larger casks (hogsheads, puncheons) are slower and subtler. See cask types and sizes.

4. Previous contents

Ex-bourbon, sherry, port and wine casks each leave their mark — a major flavour lever.
